Lemon Chicken Cooked in Creamy Mushroom Sauce Served with Steamed Broccoli, roasted new Potatoes and Rice



A dish that is delicious and made with food that heals and keeps you healthy.
Why You Must eat Mushroom : Very low in calories, yet packed with meaty flavours and contain substances that may enhance the immune system and slow tumor growth.
Why You Must eat Broccoli: It is an excellent source of antioxidant, being rich in Vitamin C and is also an excellent source of Calcium and Vitamin K. And one cup of cooked broccoli has more Vitamin C than a fresh orange. Vitamin C enhances iron absorption making the lightly cooked broccoli an ideal companion for iron rich poultry
Why You must eat Chicken: Chicken breasts are one of the leanest of all meats, skinless chicken breast is a superlative protein source for the health conscious. Vitamin B are a healthy bonus.

What You Need to make this SuperRecipe:

250 grams mushroom cut into medium size pieces
250 grams chicken breat cut into small cubes
2 onions very finely chopped
Loads of garlic (the more the better)
Fresh rosemary
1 tbsp butter
1 cup milk
1/3rd cup heavy cream
1/3rd cup grates cheese (optional)
Freshly ground pepper
Salt to taste
2 tsp oil
Juice of 1 lemon

Heat oil in a pan. Cook onions and chopped garlic till it turns brown.
Add mushrooms and cook on medium flame till mushrooms are cooked nicely and there is no water left in the pan.
Take it on a plate and keep aside to be used later again.
In the same pan, add some butter and rosemary and chopped garlic.
Add the cubed chicken pieces and cook for 2 3 minutes on both sides. Do not over cook as chicken will become chewy and we want that melt in mouth texture.
Now add milk, heavy cream, grates cheese , salt and pepper to taste
Next add the cooked mushrooms and cook for 2 r minutes more till there is a nice creamy liquid left in the pan.
Sprinkle Lemon juice at the end and mix gently.

Cook some rice separately.

Steam some broccoli florets with salt and pepper

For the roastes potatoes :

Take some new small baby potatoes and wash and scrub nicely to remove any trace of dust.
Cut them into half and boil in salt water for 6 to 7 minutes.
Roast in a preheated oven at 220 degree centigrade with some rosemary and garlic and salt and pepper for about 15 to 20 minutes.
Now is the time to assemble everything together and enjoy your meal.
