Experience A Blissful Slice of Honeyed Christmas Fruit and Nut Cake

The last month of the year and the aura of festivity has already started settling in. It’s the most wonderful time of the year when an entire year has just passed away. Some good moments, some very good moments, some excellent moments and some exciting moments , some lessons learnt and eagerly waiting for the new year to unfold and bring in more happiness, luck and prosperity for all.

Some difficult moments , some hurdles, some setbacks but that’s life….Life has to be lived with a pinch of salt exactly like a cake has to be baked with a pinch of salt and spice

I am not great at icing cakes.. but, I just do well with simple cakes and sometimes manage flavored cakes pretty well.

So when the sweet tooth starts craving, I instantly bake a simple flavor cakes and add few nuts for the crunch.. Cakes are like Nirvana to the Soul.. Well , wondering about calories..naah ..Do you know the heavier you weight, the harder it is to get kidnapped..(read it somewhere and thought why not include it here)..  So eat cake and stay safe..

But if you really really insist lets make this cake healthy by adding sugar free Nutella Sugar , some honey and beetroot juice, carrot juice and pineapple juice,all of which have a natural sweetness in it

So , My Dear Santa, I have been good this year !!! Ok Mostly Good…Hmm…Sometimes naughty…very rarely wicked .. and once cunning …ok..at least I admitted.. Can I get that thing as my Christmas Gift Please !!!

And after a mind boggling bad joke, let’s get straight to the recipe :

But let me be very very clear before you set your expectations high – Its Alcohol Free !!!

What You Need:

2 and ½ cups all-purpose flour
1/3rd cup coco powder
½ cup Honey
1/2 cup Natura Sugar Free
1/2 cup beetroot juice
1/2 cup carrot juice
1/2 cup pineapple juice
3 eggs
2 and ½ tsp baking powder
½ tsp cinnamon powder
½ tsp all spice powder
Pinch of salt
1 cup olive oil
1 tsp vanilla extract

For the nuts mix :

½ cup cherries
1/3rd cup tutti frutti
1/2 cup chopped apricots
1/3rd cup black raisins
1/3rd cup golden raisins
1/3rd cup cashew nuts
1/3rd cup walnuts
1/3rd cup almonds

Mix all the nuts together

Sieve all-purpose flour, coco powder, baking powder, spice mix and salt .
Break eggs and add oil and brown sugar to it .
Whisk nicely till everything is blend together .
Now add the dry mixture little by little while whisking at the same time.
Mix everything nicely and whisk for atleast 20 to 25 minutes if using a manual whisker and atleast 7 to 8 minutes if using an electric whisker.
Once, the batter has become nice and flowly, add the mixed nuts and mix well.

Simultaneously, you need to preheat the oven at 180 degree centigrade for at least 10 minutes.
Use a parchment paper and place on the bottom of the cake tin. Pour the batter into it and let it settle so there are no more bubbles.
Heat this cake for another 20 to 25 minutes till the take is nicely baked, risen and you can take a whiff from the farthest corner of your house.

Now don’t jump to have this cake immediately.. Let it cool down completely…Fluffy in the middle, crispy in  the ouside and devilishly good, enjoy a slice of cake with some warm milk..
