Iranian Mutton Berry Pulao

A very special recipe for your  very special and loves ones. Somehow, I like this even better than Mutton Biryani. the addittion of berries gives a nice sweet taste. You can replace Mutton with Chicken pieces as well. However, rice and mutton is classic and classy combination.

This Persian Recipe will definitely impress all of you.

What You Need:

Mutton pieces 500 grams
Basmati Rice 2 cups soaked in water for 30 minutes
3 onions cut into julians
Whole Garam Masala like 2 bay leaves + 1 cinanon + 3 green cardamom + 4 cloves
1/2 tsp turmeric powder
2 tbsp chopped cashew nuts
2 tbsp chopped almonds
1 cup cranberry
1 tbsp honey
3 tbsp ghee
1 tbsp garlic crushed
1 tbsp ginger crushed
1 tsp red chili powder

How to Make:

Soak cranberry in water for 10 minutes

Heat 2 tbsp ghee in a pan.
Add all the whole spices.
Add onion slices, ginger and garlic.
Cook till onion turns brown.
Add mutton pieces, turmeric and chili powder.
Cook for 8 to 9 minutes till mutton is well coated.
Add 3 glass of water and bring it to boil.
Cook till water is reduced to a cup and mutton is well cooked and soft.

Heat water in a pan.
Add 1/2 tsp ghee. Once water comes to a boil
Add rice, 1 tsp oil and salt to taste.
Cook till rice is 90% cooked.
Drain and spread equally over the cooked mutton.

Take a saucepan, add honey and cranberry. cook on low flame till cranberries are nicely coated with honey and you see a nice glaze.
Now add chopped almonds and cashew.
As cashew turns light golden brown, spread the same over the rice.
Cover and cook for 10-15 minutes on low flame till water is completely absorbed and rice is well cooked.

Mix it gently. Serve hot.

Zero Oil Spring Onion cooked in Toor Dal

Zero oil recipes comes under Spa Cuisine when you try to relax your stomach by not offering any complex food to digest. They not only help to cleanse your digestive track, they also give your stomach some rest. I would recommend everybody special people who eat a lot of non veg food to try out spa cuisine at least once a week. This helps you to detox your body and keeps you fit and healthy.

What You Need:

Toor Dal about 1/4th cup
Rice about 1 tsp
1 bunch of spring onion chopped
1 green chili chopped
1/2 tsp or even less salt
2 tbsp grated coconut

Steps to Make:

Bring 1 litter of water to boil in a sauce pan.
Add washed and soaked toor dal and rice.
Once dal is 80% cooked, add chopped spring onions, chopped green chilies, salt and grated coconut.
Cook till spring onion , dal and rice are nicely cooked.
Mix together with help of a fork.
Its ready to serve. You can have it with Bhakri or normal Phulka

Note : You can also add 1tsp of coconut oil to it which is an excellent detox. However, you cannot call it a zero oil recipe in that case.

I think it’s time that I buckle up my shoes and write about my new Love which is a Lebanese Restaurant that serves THE BEST Kebabs and Biryani in the town. Yes, it can actually compete with the Best of Biryani Makers with their flavours and taste.

I have a special place for Chicken in my heart and they have cracked the secret of how to prepare the most awesome Chicken Tikka Biryani. Little Spicy but the flavours are almost impossible to guess. I have tried to replicate many times  in kitchen but I have not succeeded yet.
