A very special recipe for your very special and loves ones. Somehow, I like this even better than Mutton Biryani. the addittion of berries gives a nice sweet taste. You can replace Mutton with Chicken pieces as well. However, rice and mutton is classic and classy combination.
This Persian Recipe will definitely impress all of you.
What You Need:
Mutton pieces 500 grams
Basmati Rice 2 cups soaked in water for 30 minutes
3 onions cut into julians
Whole Garam Masala like 2 bay leaves + 1 cinanon + 3 green cardamom + 4 cloves
1/2 tsp turmeric powder
2 tbsp chopped cashew nuts
2 tbsp chopped almonds
1 cup cranberry
1 tbsp honey
3 tbsp ghee
1 tbsp garlic crushed
1 tbsp ginger crushed
1 tsp red chili powder
Soak cranberry in water for 10 minutes
Heat 2 tbsp ghee in a pan.
Add all the whole spices.
Add onion slices, ginger and garlic.
Cook till onion turns brown.
Add mutton pieces, turmeric and chili powder.
Cook for 8 to 9 minutes till mutton is well coated.
Add 3 glass of water and bring it to boil.
Cook till water is reduced to a cup and mutton is well cooked and soft.
Heat water in a pan.
Add 1/2 tsp ghee. Once water comes to a boil
Add rice, 1 tsp oil and salt to taste.
Cook till rice is 90% cooked.
Drain and spread equally over the cooked mutton.
Take a saucepan, add honey and cranberry. cook on low flame till cranberries are nicely coated with honey and you see a nice glaze.
Now add chopped almonds and cashew.
As cashew turns light golden brown, spread the same over the rice.
Cover and cook for 10-15 minutes on low flame till water is completely absorbed and rice is well cooked.
Mix it gently. Serve hot.
