Basa Fish Fillet served in a bed of grilled zucchini and topped with red creamy sauce, some steamed veggies and garlic roasted bread




Simple food always does the trick for me. Vegetables have so much flavors in them that if you just toss them with right amount of salt and pepper and combine them with right ingredient, you do not need any complicated process to turn them into a gourmet dish.

Food must be healing for you, it must be constructive rather than destructive to your body. It must be appealing to look and enticing to eat.

This dish is yet another ultra simple food where you mix different food items to create a meal in itself. The garlic n herb toasted bread and roasted potatoes give you the carbohydrates while the veggies give you the right amount of anti-oxidants required in your daily diet. 

The creamy red sauce gives the right texture that your food does not turn out dry.

What You Need:

Some zuchhini cut into think slices grilled in few drops of oil with salt and pepper till done.

Basa Fish fillet marinated in lemon juice, salt, pepper, some mint and parsely leaves chopped and grilled in few drops of oil in a grill pan till they are done.

Some boiled new baby potatoes and then roasted with garlic, salt and pepper (rosemary optional) . You can roast in a grill pan or bake them in oven.

Some finely chopped onions, mushrooms and garlic tossed in a pan with salt and pepper and finally stuffed in between cooked zucchini and rolled/wrapped

For the Creamy Red Sauce :
1 cup tomato puree
1 onion finely chopped
2 tbs finely chopped mint leaves  + 1 tbs finely chopped parsley leaves
1 tbs finely chopped garlic
1/3rd cup full cream
1 tsp grated parmesan cheese
1 tsp butter
Salt and pepper to taste

Heat butter in a pan. Add chopped garlic and onions and cook till brown.
Add tomato puree , salt and pepper, add chopped mint leaves.
Cook for 7 to 8 minutes on medium flame.
Next add full cream some grated cheese, add some milk if required and cook till you get the right consistency. It should not be too watery and too thick. It should be enough to stay at one place when poured over the cooked fish fillets
Put them together in a plate. Use your imagination to make the plate look presentable.

Steam some broccoli and arrange them somewhere. They not only look good but also act an negative calorie to your body.

Weekend lunch and dinner have to be really special because after 5 days of hard work even you deserve to have meal at peace. Many a times, office hours do not permit you the same and  you are forced to quickly fill your stomach and sometimes without even realizing what food you are consuming because back of the mind you have tons of book of work queuing up in your mind.

I would love to eat an Indian Thali it does not matter if it is North India, South Indian, Gujratai Thali, Mahararashtrian Thali, Rajasthani Thali or a simple Bengali Thali.

However, cooking a full Indian meal is no joke. To include a perfect balanced diet in your meal is even a more laborious task. Hence I come up real simple meals which not only give you a balanced diet but is also therapeutic at the same time. It must look appetizing and appealing to the eyes and taste should never ever be compromised.

For the herb infused Basa Fish Fillet:

1 tsp butter
8 to 10 fish fillets
salt and pepper for marination
lemon juice
1/2 cup milk
1/3rd cup full cream
rosemary + parsley
lemon juice
finely chopped garlic

Marinate fish with salt and pepper.
Coat with finey chopped rosemary and parseley
Heat butter in a grilled pan.
Add finely chopped garlic and saute till it turns brown
Add fish fillets and cook on both sides.
Finally add milk and full cream and pour above the cooked fish fillets
Squeeze lemon juice and cook for 2 3 minutes more


Take Yellow Zucchini and Green Zucchini and cut them into long slices.
Cook in a grilled pan with salt and pepper

For the Jacket Potatoes :

Boil 2 big potatoes
Allow it to cool down completely
Scoop out a big piece
Take some sprouts, add chopped olives and add the scooped out potato and mash everything nicely.
Add salt n pepper to taste, some grated cheese, some herbs and mix everything well.
Stuff the potatoes with the above mixture.
Bake at 220 degree centigrade till cheese melts
Top with thousand island dressing and serve .

Every morning when I get up, first thing I make sure is to sit 5 minutes in silence and just be thankful for all the things I am blessed with. We as a human being generally have a tendency to take everything and everybody for granted. We often take our parents, spouse, friends, relatives,, neighbors and colleagues very very casually not realizing how it would be to get up one day without having one of them in your life..Scary isn’t it. !!

Yeah a simple good morning message from a friend can either be taken very cooly and unconcernedly or can be taken with a lot of gratitude because that friend has taken a minute from his/her life to think about you and send you a message. It is not always that a person expects something from you. Isn’t it lovely that you have a friend who thinks about you first thing in the morning and wishes that your day goes good. Such friends are to be treasured in heart for life.

I love the morning sunshine as it leaves behind all the negativity and darkness of the previous day and brings in a new hope and faith . A new morning is a miracle which you have just lived , a privilege which may not be available to many.

Just the sun falling on my face while I am reading the morning newspaper or the bright rays falling on the breakfast which I have prepared for family brings in a lot of happiness. Its acta as a natural anti-depressant. It takes away with it all the pessimism anf failures of life and tells you that no matter what, everything is going to turn out well at the end.

And then there are days even when nothing is right, you just try to create your own sunshine because it is the morning which asks you to live your day fully in each moment. It is your mood every morning that dictates your entire course of the day. “Is it going to be a normal day, is it going to be a mediocre day or you are going to make it excellent “ That’s a decision you take every day in those 5 minutes when you wake up.

Hence, take each day with a lot of cheerfulness, feel blessed , look at your self in the mirror, smile at the beautiful you, remember all your blessings , love yourself, be thankful of everybody in your life. They are there for a purpose without whom you would not be you and without you , they would not be they.

Lemon Chicken Cooked in Creamy Mushroom Sauce Served with Steamed Broccoli, roasted new Potatoes and Rice



A dish that is delicious and made with food that heals and keeps you healthy.
Why You Must eat Mushroom : Very low in calories, yet packed with meaty flavours and contain substances that may enhance the immune system and slow tumor growth.
Why You Must eat Broccoli: It is an excellent source of antioxidant, being rich in Vitamin C and is also an excellent source of Calcium and Vitamin K. And one cup of cooked broccoli has more Vitamin C than a fresh orange. Vitamin C enhances iron absorption making the lightly cooked broccoli an ideal companion for iron rich poultry
Why You must eat Chicken: Chicken breasts are one of the leanest of all meats, skinless chicken breast is a superlative protein source for the health conscious. Vitamin B are a healthy bonus.

What You Need to make this SuperRecipe:

250 grams mushroom cut into medium size pieces
250 grams chicken breat cut into small cubes
2 onions very finely chopped
Loads of garlic (the more the better)
Fresh rosemary
1 tbsp butter
1 cup milk
1/3rd cup heavy cream
1/3rd cup grates cheese (optional)
Freshly ground pepper
Salt to taste
2 tsp oil
Juice of 1 lemon

Heat oil in a pan. Cook onions and chopped garlic till it turns brown.
Add mushrooms and cook on medium flame till mushrooms are cooked nicely and there is no water left in the pan.
Take it on a plate and keep aside to be used later again.
In the same pan, add some butter and rosemary and chopped garlic.
Add the cubed chicken pieces and cook for 2 3 minutes on both sides. Do not over cook as chicken will become chewy and we want that melt in mouth texture.
Now add milk, heavy cream, grates cheese , salt and pepper to taste
Next add the cooked mushrooms and cook for 2 r minutes more till there is a nice creamy liquid left in the pan.
Sprinkle Lemon juice at the end and mix gently.

Cook some rice separately.

Steam some broccoli florets with salt and pepper

For the roastes potatoes :

Take some new small baby potatoes and wash and scrub nicely to remove any trace of dust.
Cut them into half and boil in salt water for 6 to 7 minutes.
Roast in a preheated oven at 220 degree centigrade with some rosemary and garlic and salt and pepper for about 15 to 20 minutes.
Now is the time to assemble everything together and enjoy your meal.







A Fresh Twist on the Boring Kaddu (Pumpkin Multigrain Flatbread / Kaddu Ke Thalipeeth)




Bottle gourd or Lauki is such a boring vegetable that it is almost a repulsion from buying. However, it is so nutritious that you must include it in your diet. Well having bottle gourd curry is a strict no no and a big turn off for me. Yes, I do have the option to make Halwa but I cannot have it every week.

Hence, I have found an interesting way to include it in my breakfast and that is in the form of flat bread. I grate it along with the skin on to give a nice crunch. Extra crunch is contributed by onions.
I add some flax seeds and cumin seeds for the bite. While the combination of different flour makes it apt for an awesome breakfast.

This is how a boring vegetable is turned into an uncommon dish and given a nice makeover.

What You Need:

1 and 1/2 cup grated pumpkin
1 cup whole wheat flour
1/3rd cup corn flour (makki ka atta)
1/3rd cup besan
1/3rd cup bajre ka atta (Pearl Millet Flour)
1/4 cup coriander leaves chopped
2 onions finely chopped
1 tsp cumin seeds
1 tbsp flax seeds
salt to taste
green chilies accoridng to the heat you can take
1 tsp red chili powder
1/2 tsp turmeric powder
2 tsp oil while kneading
Sudh Desi Ghee for Cooking

Steps To Make:

Place all the ingredients mentioned above in na big bowl. Drizzle Oil over the flour and knead into a smooth soft dough by adding water little by little.
Then cover and let it rest for 30 minutes

Knead the dough again on a flat surface and divide it into equal lemon size proportion.
Roll out on a flat surface  and give a nice round shape.
Mine is not a perfect round..Still its Ok !!

Brush a frying pan with little ghee or clarified butter and heat until hot.
Add paratha on the pan and cook for about 1 and 1/2 minutes. Turn it upside down, brush sime ghee and cook again .

Place the cooked parathas on a plate and cover with a foil.
Or you can place between a clean tea towel to keep warm.

Curry Leaves Surmai/King Fish Fry - The Next Temptation

A dish made moments before serving which will have you salivating 











Surmai or King Fish is the tastiest and meatiest of all fish. Since, they have less or no bones, it has become our recent favourite of fish. Also, they do not have that typical fish smell which most fishes have. The recipe below is for 4 fish steaks marinated with curry leaves (the secret to the taste and aroma of this recipe) and cooked with 2 tsp of olive added at the time of marination.

What You Need:

Surmai Steaks 4
Oil 2 tsp
Turmeric Powder 1 tsp
Coriander Powder 1 tbsp
Red Chili Powder 1 tbsp
Sambhar Powder 1 tbsp
Salt To Taste
Curry Leaves 9-10 finely chopped
Water 1-2 tbsp
Lemon Juice 1 big
Ginger Garlic Paste 1 tbsp


Steps To Make:

Take a flat plate and put all the ingredients together.
Mix everything with fingers except fish to a smooth paste.
Wash fish steaks in water 2-3 times.
Rub the marinate on both sides of the fish.
Marinate for 30 minutes.
Heat a non-stick pan.
Once pan is hot, lower the flame and put the stakes on flat pan to cook.
Cook each side for 8-9 minutes.
Do not increase the flame.
Serve with lime juice and onions.

Enjoy with loads of lemon wedges and onions !!!




Jujeh Kebab (Chicken Leg with Cranberry Pilaf) - And A food lover's dream comes true



Self pamper -- Yes that is what I call it. What more do you want from life... You get an extra off from office that too on a Monday for sweating out some weekends in office, some successful series of turnovers and a happy management.. 

Yes, I want some more..  a good plate of nicely cooked juicy chicken served with a small portion of fluffy rice, sunshine, fresh air and your favorite author's latest bestseller which is lying on your book shelf desperately howling to be explored.

Now the dish has to be simple .Isn't it.. And why I call it Jujeh Kebab because this is what my favourite restaurant George@Camp serves only on Tuesday and Thursday. Didn't I tell you it was a Monday.. That's why I had to dig into my pantry and took out a piece of nice chicken leg and some dried cranberries and then took the audacity and risk to lay my hands in experimenting something new which I would have never dared to had it been any other day.. Some things are best left with experts !!



What You Need for the Chicken

A nice big piece of chicken - give some nice deep cuts
Some 7 to 8 tomatoes chopped very finely
2 onions chopped very finely
1 tbsp tomato ketchup
1 tsp ginger garlic paste
salt to taste
Tandoori Masala 1 tbsp
Garam Masala 1 tbsp
Lemon juice about 1 tbsp
Oil about 1 tbsp
red chili powder - according to the heat you can take
Some mint leaves chopped
Some parsely leaves chopped

Heat Oil in a pan. Add ginger garlic paste. Let it cook, next add some onions and cook till it turns brown. Next throw in tomatoes, spices, herbs and let it cook till tomatoes are almost cooked and there is no raw smell left in the pan. Nothing tastes bad than a curry in which tomatoes are not cooked properly.
Finally, add the chicken piece, lemon juice, salt to taste and quote it nicely with the tomato gravy.
Add half cup water and let the chicken cook in a low to medium flame.

What You Need for the Rice:

1 cup basmati rice soaked in water for 10 minutes
1 tbsp ghee
Some whole spices like cloves, green cardamom, bay leaf and a small cinnamon stick.
Some chopped dry fruits like almonds and pistachio
Some dried cranberry
Salt to taste
1 tsp cumin seeds
Uses a pressure cooker to cook rice. Throw everything into the pressure cooker starting with ghee followed by whole spices followed by rice and finally dry fuits, cranberries and salt to taste.
Add 2 cups of water and cook on high till you hear 2 to 3 whistles.
Thats is all you need to cook rice.

Enjoy your meal. For serving, take a small tomato and char it on flame. It taste so tamatoeee..!!!

And the effect is absolutely charismatic without masking any flavours 


Nolen Gur (Date Palm Jaggery) ki Angoori Rasmalai - A food fit for Gods







You'll have to taste it to believe it.

A food fit for Gods made with date palm jaggery which people in the Eastern part of India are very well aware of in the name of Nolen Gur.

Well well well, the recipe is apt for people who want to control their sweet craving and are watching their weight.

It is also fit for people suffering from diabetes as it does not have sugar in it.

Finally, the best time to have it is in winter as jaggery gives a lot of warmth to the body.

Now, what are you waiting for.. Do you need any more excuse which will prevent you from trying this recipe.

This recipe is a must try to please even the most finicky gourmand

What You Need for the Rabdi :

4 cups milk reduced to little less than half by cooking on low flame and continuously stirring to prevent it from burning . Use a think bottom pan to be more safe.
Add 4-5 strand of kesar and few crushed cardamom to get the color and flavour while cooking.

What You Need for the Angoori Rasmalai:

Take 4 cups of whole cream milk. Bring it to a boil. Squeeze juice of 1 lemon and add it to the milk.
The milk will start curdling. As soon as you see the light green water, add 10-12 ice cubes. This is important to get very soft paneer as adding ice-cubes stops the milk curdling process. Now drain the water and hang it for 10-15 minutes to remove any water.
Mash the paneer very well with hands for almost 10 minutes .Add 1 tbsp of suji and 1 tbsp of sugar and mash again for 5 minutes.
Make very very small balls as they almost double the size when cooked.
Now boil some Nolen Gur about 1 cup in 2 glass of water. Once it starts boiling, add the chenna balls into it and let it cook for 10 minutes.

Assembling Rabdi and Rasmalai:

Add the balls to milk.
Let the reduced nolen gur cool down completely. Add it to the milk and cook on low flame for about 4 to 5 minutes more.
Angoori Rabdi is ready . Garnish with dry fruits and serve chilled.
