Happy Navratri: Worship Goddess Katyaini on Tithi : Shasthi , Day-8 . It has to be special with Palak Paneer

The eighth among the Shakti Roopas is Goddess Mahagauri. Her complexion is like that of a conch, moon or Jasmine. She always remains eight years old. With four arms and the fairest complexion of all the Durgas Shaktis, Mahagauri radiates peace and compassion. Her upper-right hand is in the pose of allaying fear and lower-right hand holds a trident. The upper-left hand holds a Damaru and the lower one is in the pose of granting boons. Dressed in a white or green sari, she holds a drum and a trident and is often depicted riding a bull.

As per legends, Goddess Parvati practiced severest possible penance with a desire to have Lord Shiva as her divine consort. Due to the severe penances her body became black. Lord Shiva was so pleased by her penance that he washed her body with the holy water of Ganga. As a result, her complexion transformed. Since then she is known as Mahagauri.

Those who worship her, wash away all their sins. The devotee of Mahagauri gets purified in all aspects. She channels the thought waves of the devotees towards the path of the virtue and destroys Asat.

The food has to be special on this day. Made No Onion No Garlic Phalahari Palak Paneer.

What You Need :

Spinach 1 bunch
Cottage Cheese Cubes/Panner 250 grams
Tomatoes Chopped finely 4
Green Chili 1
Red Chili 1 tsp
Cumin Powder 1 tsp
Turmeric Powder 1 tsp
Salt To Taste
Sugar To Taste
10 cashew nuts soaked in warm milk and ground to fine paste
Oil 2 tbsp
Garam Masala:1 tsp
Whole Spices : 2 bay leaf + 3 cloves + 2 green cardamom + 1 cinnamon stick

Steps To Make:

Fry paneer cubes for this recipe till golden brown. Keep aside.
Wash spinach 3 to 4 times to remove all dirt particles.
Add 1/3 cup of water and boil in pressure cooker for 1 whistle.
As your pressure cooker drops pressure, grind tomatoes to a smooth paste.
Remove and keep aside.
Now add spinach and blend to a not so smooth paste. It should have some leafy texture left.
Remove and keep aside.
Blend your cashew and milk together.
Now les make the gravy.
Heat oil in a kadai.
Add all the dry whole spices.
Add green chilies and tomato puree. Cover and cook on high . Make sure you cover th kadai while cooking else tomato puree will start dancing and spoil your entire gas stove.
Add red chili powder, turmeric powder and cumin powder.
Once your tomato is well cooked and you smell a nice aroma, add spinach puree.
Cook for 2 to 3 minutes till spinach and tomato blend well.
Add the cashew paste and cook for few more minutes.
Add spinach paste, paneer cubes and half cup of water.
Finally , take out a nice serving bowl, put your spinach gravy.
Place the fried paneer cubes .
