Carrot Raisins Cake




What you need :

2 cups all purpose flour
1 cup powdered fine sugar
2 tsp baking powder
1 tsp baking soda

2 cups grated carrot
handful of raisings and cashew nuts ( You can use any nuts of your choice)

1 cup olive oil
2 eggs
3/4th cup fruit juice (any fruit will go, I used Tropicana Lichi Juice)
1 tsp vanila essence

Preheat oven at 180 C for 10 minutes
Grease your baking tray

How you do:

Seive dry ingredients except nuts and raisins and mix together. Keep aside.
Blend eggs, oil ,grated carrot, fruit juice and vanila essence with a hand blender.
Pour dry ingredients 1 tbsp at a time and gently fold in one direction.
Once, everything is mixed together, use an electric blender and blend on low for 7-8 minutes.

Pour half the batter into tray. Spread half the raisins and cashew nuts.
Pour the remaining batter into the baking tray.Spread the remaining raisins and cashew nuts.
Bake for 40 minutes at 180 C on low rack.
Allow the cake to cool down completely before you cut it into pieces.
(Do a toothpick test or clean knife test to check if cake has baked completely)
