Hyderabadi Okra Fry



Ingredients:

250 grams Okra, cut into 1 inch long pieces and then slit into 4 thin strips

3 tbsp curd

2 tbsp besan

1 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

Salt to taste Oil for frying

Method to cook:

Mix everything well except oil Heat oil in a kadai.

Add 3-4 bhindi coated with besan, curd and spices.

Cook till it turns brown. Serve hot

Paneer in Almond Sauce


Ingredients:
250 gms paneer cubes
3 tomatoes pureed
1 full garlic clove ground to paste
1 big onion pureed
1 cup milk
½ cup almond flaked
2 tbsp oil
1 tsp turmeric powder
1 tsp red chili powder
2 tsp sugar
1 tsp salt
2 drops of soy sauce
1 tbsp garam masala
1 tsp dry fenugreek leaves crushed
1 tsp cumin seeds

Method to cook:
Heat oil in a kadai . Shallow fry paneer cubes till brown.
In the same oil, add cumin seeds. Once it starts fluttering, add onion and garlic paste.
Cook till it turns brown.
Add tomato puree and cook till the raw smell disppaears. Add all dry masalas including fenugreek leaves. Cook for few more minutes.
Blend milk and almond flakes to a fine paste and add to the gravy. Add water if required.
Add paneer cubes, sugar , salt and cook for 2-3 minutes.
Serve Hot with Roti/Rice/Naan

Mixed Vegetable Paratha



Ingredients:
Atta Dough
1 cup beans
1 cup cauliflower
I cup green peas
1 tsp turmeric powder
1 tsp red chilli powder
Salt to taste
Chopped coriander leaves
Oil for cooking

Method to cook:
Put the vegetables in food processor and grate coarsely.
Cook in 1 tbsp oil with turmeric, red chilli powder and salt until it loses all its moisture.
Mix coriander leaves and allow the stuffing to cool down.
Stuff into Lemon Size Atta Dough , roll out into thin parathas.
Cook on both sides applying ghee.

Mutton Kolhapuri







Ingredients :
3 tsp Kolhapuri Masala
500 gms Mutton Cubes
2 small tomato
2 medium size onion
2 tbsp oil
salt to taste

Method to cook:
Heat oil in a pressure cooker.
Puree tomato and onion together and add it to the cooker once oil is hot.
Cook till raw smell of onion and tomato disappears
Add Kolhapuri Masala to it and mix well.
Add mutton cubes. Mix the masala well with mutton.
Add 1 cup of water, salt and put the lid on.
Cook Mutton on High till you hear one whistle. Lower the flame and cook for 25-30 minutes more.
Switch off the flame and allow pressure to drop.
Serve hot with Rice.

Besan Ladoo


Ingredients:
3 cups Besan
2 cups ghee
1 cup powdered sugar
1/4th cup chopped cashew nuts
½ tsp freshly ground cardamom

Method to cook:
Mix besan and ghee together.
Microwave on high for 6 minutes stirring every two minutes.
Allow the mixture to cool.
Allow to cool. Add sugar, cardamom and cashew nuts.
Make small balls. Allow to cool completely before serving.
