Beetroot Curd Rice



Beetroot is a super food. Why ? Its because beetroot is a rich source of iron and folic acid.
It can help lower blood pressure and help you in your exercise performance.
It recommended to all women as it to keep hemoglobin count in check . Since, it becomes quite boring to eat it raw, you can learn to prepare different recipes our daily diet does not become mundane.


What You Need :

2 cups cooked rice
1 beetroot boiled with skin or 2 minutes in pressure cooker. Peel and chop into small pieces or grate them.
Salt to taste
Sugar to taste
1 cup thick curd

For tempering:

1 tbsp oil or ghee
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp chana dal + 1 tsp peanuts + 1 tsp urad dal + few cashew nuts
Curry Leaves
Green chili whole
Red chili whole
Hing
Chopped coriander leaves





Steps To Make:

Soak dal for 10 minutes before you start the tempering
Mix rice and curd together
Heat oil in a pan
Add hing, curry leaves and soaked dal and peanuts
Add mustard seeds, cumin seeds and let it splutter
Add cashew , green chili, red chili.
Add chopped or grated beetroot.
Add the tempering to rice and curd mixture.
Add salt and sugar to taste
Garnish with chopped coriander leaves
